1. The outward forces from the fusion process at the center keep the star from collapsing. The inward forces due to gravitation keep the star from exploding. The star will take on a size which exactly balances these forces.
2. The birth of a star occurs when hydrogen fusion begins at its center. The death of a star occurs when the fusion process finally ends: when its fusionable material is all used up, when the star collapses into a neutron star or black hole, or when it explodes in a supernova.
3. The Big Dipper circles Polaris once every 24 hours or so, so it spends roughly 12 hours right side up, and 12 hours upside down.
