The Ancient Greeks generally used a small number of props.
Some were used in every play -- such as the various character masks (the mouths of which are thought to have doubled as a sort of megaphone, allowing the actor's voice to be heard throughout the theatre audience).
Others were more specialized, and were used as required -- daggers and spears, bloody rags, boxes of all sorts and even dead animals are attested in various sources.
Mention should also be made of a prop that has been argued about quite a bit in the scholarly community -- the crane. In Euripides' plays, especially, the resolution of the action is often accomplished by the arrival of a god.
It is thought that these god characters 'flew' above the other characters, standing in a box raised by a 'crane' (much like the modern 'cherry-picker' apparatus).
For obvious reasons, this is the origin of the phrase 'deus ex machina', 'god out of the machine'.
Overall setup seems to have depended a great deal on the setting of the play; tragedy and comedy probably had very similar production values.
The various parts of the Greek Theatre were quite specialized, but you should really only need to concentrate on the Skena and the Orchestra.
The Skena represents the backdrop (usually a specialized permanent building facade that could be dressed up in various ways), the entrances and exits, and the 'stage' (called the Proskene -- literally 'in front of the Skena') on which the main actors moved.
The Orchestra was a rounded pit in front of the Skena, for the Chorus (a groups of actors and singers and dancers that often spoke as one body in response to action on stage).
